Bos Taurus vs Bos Indicus
Domestic cattle are group into two main categories bos taurus and bos indicus. Bos taurus are breeds of cattle that originated in Europe. Bos indicus breeds originated in India. Subsequently, bos taurus cattle are better adapted to cold conditions & bos indicus are better adapted to hot dry climates.
Angus cattle are bos taurus along with Hereford, Waygu, Charolais. Brahman cattle are an example of bos indicus.
Why is this important ? MARBLING (intramuscular fat)!!! Bos Taurus cattle metabolize their food differently and store fat better within the muscles! This helped them tolerate cold conditions and long winters. Marbling is not only diet dependent but genetics play a crucial role on the storage of intramuscular fat AKA marbling.
Marbling greatly affects the taste and tenderness of your meat!
